Baking Time: 20 to 25 minutes
Baking Temperature: 180 °C (350°F)
Ingredients
For the Topping
- 100 g butter
- 100 g sugar
- 75 g flour
- 1 teaspoon Flavahs Alba cinnamon flakes
For the Muffins
- 4 green apples, chopped into cubes
- 100 g brown sugar
- 100 g white sugar
- 2 teaspoons Flavahs Alba cinnamon powder
- 375 g all-purpose flour
- 10 ml vanilla essence
- 5 g baking powder
- 5 g salt
- 5 g baking soda
- 150 ml vegetable oil
- 500 ml milk
Instructions:
Prep the Oven
Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners.
Make the Wet Base
In a large bowl, whisk together the oil, salt, brown sugar, white sugar, vanilla, and milk until well combined.
Add Dry Ingredients
Gradually add the flour, baking powder, baking soda, and Flavahs Alba cinnamon powder. Stir until just combined. Avoid overmixing.
Fold in the Apples
Gently fold in the chopped green apples so they’re evenly distributed throughout the batter.
Fill the Muffin Cups
Use a measuring cup to fill each muffin liner about halfway.
Make the Topping
In a separate bowl, mix together the butter, sugar, and flour until crumbly. Stir in the Flavahs Alba cinnamon flakes.
Top and Bake
Sprinkle the topping evenly over the muffins. Bake for 20 to 25 minutes, or until a toothpick inserted in the centre comes out clean and the tops are golden.
Cool and Finish
Let the muffins rest in the pan for 5 minutes, then transfer to a wire rack. Once cooled, dust with icing sugar.
Serve warm or at room temperature. Pairs beautifully with tea or black coffee.

Why Alba Cinnamon Matters in These Muffins
Cinnamon is the foundation of this recipe, not just a finishing touch. And when it’s baked into every bite, the quality of the cinnamon makes a real difference.
Flavahs Alba cinnamon powder brings a soft, sweet complexity that doesn’t overpower the apples or the vanilla. Unlike Cassia, which can taste harsh or one-dimensional when baked, Alba stays smooth and balanced. It lingers in the background with warmth and floral depth, turning a simple muffin into something memorable.
And in the topping, the flakes toast beautifully, adding texture and a fragrant crunch that lifts each bite. With Alba cinnamon, these muffins don’t just smell incredible, they taste grounded and thoughtfully spiced from top to crumb.
