The dough is pillowy and spiced, and the coating adds a cozy crunch. Best enjoyed warm, these doughnuts are ideal for brunch, special mornings, or anytime you want something comforting and golden.
Prep Time: 20 minutes (plus 1 hour 30 minutes resting time)
Cook Time: 15 to 20 minutes
Ingredients
For the Coating
- 100 g sugar
- 5 g Flavahs Alba Cinnamon powder
For the Doughnuts
- 500 g flour
- 10 g yeast
- 10 g salt
- 75 g softened butter or margarine
- 2 eggs
- 50 g sugar
- 20 g Flavahs Alba Cinnamon powder
- 250 ml lukewarm water
Instructions:
Make the Dough
In a large bowl, mix the yeast, lukewarm water, and 1 tablespoon of sugar. Let it sit for 5 to 10 minutes until frothy.
Add the flour, remaining sugar, salt, and Flavahs Alba Cinnamon powder to the activated yeast. Mix until combined.
Separate the eggs and add the yolks to the mixture. Knead well.
Add the softened butter and knead again until the dough becomes smooth and no longer sticks to your hands.
Cover the bowl with a towel and let the dough rise in a warm spot for about an hour.
Shape the Doughnuts
Once risen, punch down the dough. Roll it out on a floured surface to about ½ inch thickness.
Cut out doughnuts using a doughnut cutter. Re-roll scraps as needed.
Place the cut doughnuts on a tray and let them rise again for 30 to 40 minutes, until puffy.
Fry the Doughnuts
Heat oil in a deep pan over medium heat.
Fry 2 or 3 doughnuts at a time for about 1 minute per side, or until golden brown. Drain briefly on paper towels.
Coat with Cinnamon Sugar
Mix the sugar and Flavahs Alba Cinnamon powder on a large plate.
While the doughnuts are still warm, roll each one in the cinnamon sugar until fully coated.
Serving Tip
These doughnuts are best served fresh and warm. Enjoy them with a cup of coffee or a mug of cinnamon hot chocolate for a nostalgic, comforting moment.

Why Alba Cinnamon Is Essential for These Doughnuts
When it comes to cinnamon sugar coatings, not all spice is equal. Cassia cinnamon, common in many blends, tends to overpower with a sharp, woody bite. In contrast, Alba cinnamon is smooth and fragrant. It adds warmth without bitterness and lets the sweetness of the sugar shine.
In the dough, Alba blends softly into the mix, infusing each bite with a mellow spice that lingers but never overwhelms. In the sugar topping, it lifts the entire bite, turning something as simple as fried dough into a refined treat.
These doughnuts may be classic in form, but it’s the quality of the cinnamon that sets them apart.
